I've been lucky to inherit my great Aunt Eileen's cookbook. It's a real treasure trove of her
favourites and experiements. She received it as a gift from a friend, Mrs Broadhurst, in 1939. The book "The Woman's Mirror Recipe Book" is a cracker.
So over the the next few weeks we'll feature a random recipe. This week it's Chicken and Savoury Rice, submitted by Amy of Albany.
- Cut up a chicken, cover with stock & place in a saucepan and season with salt and pepper
- Put on lid, set on a low heat to gradually come to the boil
- In another saucepan stew 1/2 lb of tomatoes in a little water
- Fry 2 x sliced onions with 1/2 clove garlic (chopped) in a tbs of lard, strain and add to tomatoes
- Add 1/2 cup stock, put in 1 tbs rice and boil hard until rice is done (~20 mins)
- After chicken has stewed 40 mins, add tomato & rice mixture and serve hot
