A really simple dinner

Time for the weekly cleanout of the fridge? Wondering what to cook for dinner? These two worlds collide with amazing results at Planet Andrew.

Well maybe we're talking it up a tad...but this home experiment has yielded handsomely. Picture this..slightly manic skinhead at home on Tuesday arvo. Should be doing bookwork. Easily distracted. And think of last nights Masterchef moment when George told Billy, "It's a stock - just cut up the vegies and put them in the pot."

"WOW! Great idea there fellow skinhead - thanks for the inspiration!" So Andrew delves into the crisper of the fridge, inspired to create...something.

Here's what happened. He pulled out:

  • 1/4 pumpkin
  • 6 x carrots
  • 2 x zucchini
  • 4 x tomatoes
  • 1/2 kg cherry tomatoes
  • 1 x chunk of broccoli
  • 1/2 red pepper
  • 1 x handful of spinach leaves

In a frenzied 5 mins he roughly chopped all these (no peeling) and plonked them into a big pot along with 2 x cloves garlic. Then skipped outside & grabbed a few bay leaves, some garlic chives and parsley. These went into the pot with about 4 L of water, a chicken stock cube and 2 tsp of smoked paprika powder (aka pimeton). Plus the obligatory salt & pepper.

These were brought to boil then simmered for an hour or so.

Next steps:

  • Mash it all down
  • Pop in maybe 100-200ml cream
  • Cook up some pasta, drain, add a dash of Talinga Grove olive oil
  • Serve up with some fresh peeled or grated parmesan
